Sesquiterpene is a chemical class comprising more than 300 compounds. They are terpenoids with skeletons containing 15 carbons, built from three isoprene units. Within this class there are several types of chemical structures, from linear to acyclic and cyclic carbon chains. The diversity of structures arises from the several biosynthetic forms in which sesquiterpenes can be produced and also by the diversity of possible chiral centers and stereospecific regions.

Bioactivities: Hemostatic, antitumor, and antibacterial properties (Modonova et al., 1986). Cinaropicrin, apigenin, and apigenin-7-O-glycoside exhibit choleretic effects (Daariimaa, 2006; Glasl et al., 2007). Sesquiterpenes (Konovalova et al., 1979) were found to exhibit neoplasm-inhibiting and bactericidal activities (Modonova et al., 1986).
Natural Variability of Essential Oil Components

The well-known caraway (Carum carvi) seems to be an essential oil–bearing species of relatively low variability concerning the oil constituents. Nowadays, besides being a popular spice, it is a source of essential oil of excellent antimicrobial properties, but the spasmolytic and cholagogue effects justify its use in phytotherapy, too. In the oil of caraway, the ratio of the main components S(+) carvone and R(+) limonene in the oil is above 90%, most frequently above 95% (Table 4.1). Variability is manifested in most cases only in their proportions compared to each other. Minor constituents have been rarely identified and mentioned. The majority of constituents are all monoterpenes, besides the sesquiterpene β-caryophyllene and some phenolic and aliphatic compounds.

In anise EO prepared by solvent extraction (SE), microwave-assisted extraction (MAE) and hydro-distillation (HD) techniques, other classes were predicated mainly on sesquiterpenes class viz. sesquiterpenes hydrocarbons (6.47, 5.06 and 8.80%, respectively) and oxygenated sesquiterpenes (2.87, 0.19 and 0.75%, respectively) in addition to hydrocarbons detected only in solvent extraction method (2.30%). In star anise EO prepared by SE, MAE and HD, the other classes identified were predominantly monoterpenes as monoterpene hydrocarbons (0.95, 1.09, 3.69%, respectively) and oxygenated monoterpenes (0.62, 1.68, 1.28%, respectively). The detected chemical classes and their relative percentages are simplified in Figure 2. All volatiles identified in both anise and star anise EO were summarised in Table 1.

Sesquiterpene lactones (SL) are defined in a variety of plant families such as Acanthaceae, Anacardiaceae, Apiaceae, Euphorbiaceae, Lauraceae, Magnoliaceae, Menispermaceae, Rutaceae, Winteraceae, and Hepatideae and also include a variety of biologically active plant chemicals such as farnesene with a wide range of biological effects [15]. Sesquiterpene lactones are a class of naturally occurring plant terpenoids, which represent the diversity and unique class of natural products. They are important components of volatile oils formed from oxidative transformation to produce from head-tail condensation of three isoprene units from cyclization [16]. Sesquiterpenes, a member of the terpene family, have great importance due to their biological activity and their impact on human diseases. When the literature is reviewed, it has been determined that sesquiterpenes have a significant biological effect in wide spectrum researches. Sesquiterpenoids and especially Asteraceae sesquiterpene lactones have played important roles in human health as part of a balanced diet and as a pharmaceutical agent for their therapeutic potential for the treatment of cardiovascular diseases and cancer [17].

The hydro distillation of the fresh aerial parts of plant yielded 0.06% (v/w), clear light yellow oil with a characteristic odor. Analysis of the oil led to the identification of 23 constituents, which represents 78.05% of the total oil as shown in Table 1. Among them, eighteen were hydrocarbons (60.50%) and five were oxygenated derivatives (39.50%). Sesquiterpenes were predominant (60%) while monoterpenes represented about 40% of the total amount. The main constituents of the sesquiterpenoid hydrocarbon present were β-bisabolene (3.38%), murolene (2.83%), β-farnesene (2.09%), and oxygenated derivatives were α-epi-cadinenol (16.63%), and α-bisabolol (4.08%). For monoterpenoid hydrocarbons the most abundant constituents are O-cymene (13.54%), α-phyllandrene (7.46%), 2-σ-carene (5.77%), and camphene (3.59%) with bornyl acetate as oxygenated derivative of mono terpenoid.
