Nitrates and nitrites are used; most commonly sodium nitrate and sodium nitrite have been used in curing meat to reduce spoilage and stabilise red pigmentation. In products such as pasteurised ham they have been an important means of preventing germination of botulinum spores and thereby stopping production of the botulism toxin.

IPs get rusted due to oxidation by air and moisture. Thus, the magnetization of the IPs decreases results in an increment of the off-state viscosity. This may have a negative impact on the functioning of MRP fluids.[76] Observed shear yield stress values of MRPF were also low due to oxidation of IPs.[77] The oxidation issue may be addressed via the use of organic coatings and also electro-less nickel plating on the IPs. This keeps the IPs out of the surroundings for a longer time. Sodium nitrite had also been employed as a rust inhibitor in MRPF because of its ability to be an anti-corrosive.[76]
