The so-called green bone from the slaughter of cattle is cleaned, degreased, dried, sorted and crushed to a particle size of about 1–2 cm. The pieces of bone are then treated with dilute hydrochloric acid to remove mineral salts. The resulting sponge-like material is called ossein. From this point on in the manufacture of Type B gelatin, both cattle hides and bone tissues receive similar treatment.

Cattle hides are the least-used gelatin raw material in North America today.2 Gelatin recovered from bone is used primarily in photographic applications: some is used for pharmaceutical purposes. Calcium carbonate (CC) is one widely used calcium supplement when the recommended dietary calcium intake is insufficient. Another supplement is ossein-hydroxyapatite complex (OHC), which has also been shown to be effective in maintaining BMD and to have a more intense osteogenic effect than a calcium supplement alone after oral administration11–18. OHC consists of ossein, the protein that forms the organic matrix of bone, and hydroxyapatite (Ca5[PO4]3OH), the most relevant bone salt of vertebrate bone.
