Phytosterols are one of the main groups of steroid alcohol phytochemicals that naturally exist in various types of vegetables and fruits. They have a similar backbone with slight differences in the number of carbon atoms, and also the location of a double bond in the side chain [4]. Considering the low quantity in natural resources and also nearly the same physical characteristics, separation of phytosterols is considerably difficult. Stigmasterol, β-sitosterol, and campesterol are the main dietary phytosterols thet play a vital role in reducing blood cholesterol and cardiovascular diseases in humans. The health benefits of phytosterols lead to their use in functional foods [5].
