Stevia content was analyzed through the compounds with greater sweetening power in stevia extract: stevioside and rebaudioside A. The quantification of stevioside and rebaudioside A was performed with a HPLC (Perkin Elmer Flexar) with manual injector and a UV-visible Flexer detector at a wavelength of 210 nm. A C18 column (Thermo Scientific 250 mm × 4.6 mm) was used injecting a volume sample of 20 μL. A software (Chromera) was used to acquire the data. The chromatographic separation was performed in isocratic form using as mobile phase acetonitrile (ACN): water (65:35 v/v) and at a flow rate of 1 mL/min.
