Prodrug synthesis is a powerful method to block bitter functionality, thereby improving the palatability of bitter compounds. Prodrugs for taste improvement that have been already explored include chloramphenicol palmitate [13], chloramphenicol phosphite [14], chloramphenicol cinnamate [15], clindamycin palmitate [13,16], sulfisoxazole acetyl esters, lincomycin phosphate or alkyl esters [17], triamcinolone diacetate ester [18], erythromycin 2-ethyl succinate [19], erythromycin B enol ether ethyl succinate, and (acyloxy) alkyl carbamate derivatives of norfloxacin [20,21].
