Black-eyed peas are a variety of cowpeas beans, despite their name. They are oval shaped with a white color and are used in traditional recipes in the U.S. south.

Caribbean cuisine featured kidney beans, coconut (Cocos nucifera), and thyme. Jamaicans combined these beans with rice and coconut milk. Copying Spain, Cubans made black beans with rice and pork. In the Caribbean, Mexico, Brazil, South Carolina, and Georgia, slaves ate variants of rice and legumes. Although not our primary focus, cowpeas—also known as black-eyed peas—had been a West African staple since about 3000 BCE.138 Portugal gave West Africa beans in the sixteenth century, adding another legume. Slaves employed these possibilities in the Americas, eating black beans and rice in the Caribbean whereas New Orleans, Louisiana, specialized in red kidney beans and rice. Cowpeas and rice fed South Carolinian and Georgian slaves. On the Sea Islands off the coast of South Carolina, Georgia, and Florida, the preferred cowpea was the sea island red pea.

As a general rule, animal products are higher in LNAA while plant foods have lesser amounts. The solution to the problem, then, is consuming of a complex, carbohydrate-rich diet (whole- and plant foods) with adequate tryptophan and lower in LNAAs, such as legumes (black-eyed peas, for example). This is consistent with the recommendation to consume a whole-food, plant-based diet in order to help with stress control, reduce anxiety, and improve mood.123

The result of the bulk density of non-fermented and fermented seed samples is depicted in Figure 2. The range of bulk density was obtained from 0.39 to 0.72 g/cm3, and results clearly revealed that SSF significantly (p < 0.05) affected the bulk density of fermented seed samples in comparison with non-fermented powder. Herein, up-to 48 h of fermentation, a non-significant (p < 0.05) difference was observed in the bulk density of watermelon seed powder (0.66 g/cm3) as compared to the bulk density of control seed powder (0.69 g/cm3). A significant (p < 0.05) increase in bulk density was observed in seed powders of 72 to 120 h in comparison with non-fermented seed samples; however, a non-significant (p < 0.05) difference was observed in the sample of 120 and 144 h, respectively. This decrease in bulk density with increasing time of fermentation could be a better approach for the packaging of food materials, as it directly affects the physical characteristics of food as well as packaging materials (22, 23). Our results were supported by the findings of Sadh et al. (17) and Chawla et al. (15), who perceived a significant decrease in bulk density of solid-state fermented peanut press cake and black-eyed pea samples, respectively.

Score plot represents the clusters of population originating from different geographical regions of India. Soybean consumption in East Indian diet was observed to be very high as compared to other regions (Fig. 4b) which could be associated with their high isoflavone consumption (Fig. 3c). Respondents from north, west and south India had very similar isoflavone intake. Blackpea, hyacinth bean, red cowpea, black-eyed pea, mothbean, groundnut dominated the legume consumption of West Indian population (Fig. 4a–b). Although the sample population was selected from the same city, a diversity of legume consumption pattern could be attributed to the diverse ethnicity of respondents who had migrated from different parts of India. Starkly varying climate of different geographical regions gives a variety of local produce, on which Indian food culture has been built. Having migrated from such diverse regions, the people carry with them the influence of native food culture wherever they settle down in the country.

It was aimed to include 60 children (aged 3–12 years old) with ALL confirmed by an oncologist, in this study. Those children, who were in the maintenance phase of chemotherapy treatment with no specific diet or allergy to soybean or black-eyed pea (cowpea), were included in the study in case of their own and their parents’ consent.
