In the Lacnunga, there is guidance on how to remedy carbuncles, lice (including a concoction applied thrice to the navel), itching, warty eruptions, black ulcers, erysipelas, and wens (infected follicle). For the latter, For a wen salve, take helenium and radish and chervil and ravens foot, English rape and fennel and sage, and southernwood, and pound them together, and take a good deal of garlic, pound and wring these through a cloth into spoilt honey: when it is thoroughly sodden, then add pepper and zedoary and galingale and ginger and cinnamon and laurel berries and pyrethrum, a good deal of each according to its efficacy: and when the juice of the worts and honey are so mingled, then seethe thou it twice as strongly as it was before sodden; then wilt thou have a good salve against wens.58

Oxygenation in the p-position of cinnamic acid followed by methylation of the phenol and reduction of the acid to alcohol with subsequent elimination of the alcohol gives estragole (also known as methyl chavicol (52) and anethole (53)). Estragole is found in a variety of oils, mostly herb oils such as basil, tarragon, chervil, fennel, clary sage, anise, and rosemary. Anethole occurs in both the (E)- and (Z)-forms, the more thermodynamically stable (E)-isomer (shown in Figure 6.10) is the commoner, the (Z)-isomer is the more toxic of the two. Anethole is found in spices and herbs such as anise, fennel, lemon balm, coriander, and basil and also in flower oils such as ylang ylang and lavender.

Increasing dietary intake of nitrate via vegetable and vegetables juices may prove to be an important consideration when constructing a heart-healthy diet. Foods that are particularly high in dietary nitrate include celery, celeriac, chervil, Chinese cabbage, cress, endive, fennel, kohlrabi, leek, lettuce, parsley, red beetroot, spinach, and rocket.273

The participants received a list of high-nitrate food products to avoid for 48 hours prior to the experiment; the list included green leafy vegetables (i.e., lettuce, spinach, rocket, beetroot, celery, cress, chervil, celeriac, fennel, leek, endive, parsley, cabbage, dill), grapes, tea, and cured meat products. They were also asked to record their dietary log for 2 days prior to the first testing and replicate the same diet before the second testing. All experiments were conducted at the same morning hours after an overnight fasting. On the day of the testing, participants were instructed not to brush their teeth and not to use any mouthwash or chewing gum, and to refrain from caffeine consumption. Participants were also asked to refrain from strenuous exercise and alcohol consumption for 48 hours, and to have enough rest the night before testing.
